a garden in riotous bloom
Beautiful. Damn hard. Increasingly useful.

Yep, absolutely, especially when it comes to kitchen equipment. (I don't just mean investing in high-end stuff; I killed two KitchenAid blenders in two years before J's mother gave us the Vitamix. Making almond cream can burn out an ordinary blender motor real fast.) Earth Balance costs twice as much as butter, and packaged vegan mozzarella shreds cost twice as much as cheap cheese, not to mention that I have to go to a specialty store to find them. Making my own butter and cheese has time, ingredient, and equipment costs.

It is absolutely possible to avoid dairy and not substitute for it. I've had some very tasty cheeseless pizza, pasta with tomato sauce, and sorbet. There the cost is caution and time when reading ingredient lists and ordering from menus.

But eating dairy makes me physically and mentally ill, and that cost ends up being higher than all the others. :(

Some days I would kill for the cheap convenience of a $1 slice of pizza.
