Oh! I nearly forgot. In some really well stocked mixed culture Asian markets, I've seen both chestnut flour and even acorn flour (no idea how the acorn was processed, toasted or not, how well de-bittered it was.) Both are a bit pricey, but for those who can it might be a fun tool for experiments.
